Mandisa Horn from Horn O Plenty in Bedford shares a recipe for Sweet Potato Hummus.
Sweet Potato Hummus:
1 large sweet potato around 14-16oz
1 cup cooked chickpeas, drained
1 garlic grated
1/4 cup lemon juice
1 tsp cumin toasted and ground
1 TBS black pepper
1 tsp cayenne pepper
2 TBS olive oil
1 tsp sea salt or to taste
Preheat oven to 350 degrees. Cut sweet potato in half lengthwise and place cut side down on a small sheet pan. Bake for 30 minutes or until potato is cooked all the way and soft.
Add all ingredients in a food processor or blender and blend until smooth. Taste and add salt, pepper and cayenne to your liking.
