Stuffed Roasted Butternut and Brown Butter Sauce
*to make vegetarian replace meat with your favorite grain precooked and seasoned.
For the stuffing:
1/2 # pork ground
1/2 # beef ground
1 tea allspice
2 tea black pepper ground
2 tea coriander ground
2 tea fresh chopped sage
Salt to taste
1 apple skin on, chopped small
Sauté meat and spices and herbs until just cooked, take off heat and add Apple and 1 cup of you favorite precooked grain.
For the Butternut:
In a small statue pan brown 4 TBS butter
Wash 1 medium sized Butternut squash
Cut butternut every 2 1/2 inches to make butternut rounds.
Salt and pepper and roast rounds on sheet pan in oven at 350 until centers are just soft.
Cut out centers of each round, leaving 1/4 inch butternut still attached to the round.
Put all butternut centers pieces that you cut out and put into blender add brown butter a pinch of salt and pepper and blend until smooth.
Divide the sauce on each plate for each serving. Top with finished stuffed butternuts and serve
