Ingredients

Measure

Green lentils, rinsed  

1 cup

Water or low-sodium broth

2 cups

Olive or canola oil

1 tbsp.

Onion, chopped

1 cup (1 medium)

Garlic, minced

1 tbsp.

Red bell pepper, diced

1 cup (1 ea)

Tomato paste

6 oz (1 small can)

BBQ sauce

½ cup

Smoked paprika (plain will work too)

1 tsp.

Water 

¾ cup

Apple cider vinegar (or lemon juice)

2 tbsp.

Salt & pepper

To taste

Whole wheat buns, for serving

 

Method of Preparation

 

  1. In a small saucepan, add lentils and water. Bring to a boil for a minute, then simmer on low for about 20 minutes or until tender. Drain off any excess water and set aside.
  2. Heat a medium- large skillet over medium heat. Add the oil, then the chopped onion, garlic, and peppers. Stir until translucent, or about 5-10 minutes.
  3. In a separate bowl, whisk together the tomato paste, BBQ sauce, paprika, water, and vinegar. Pour the mixture into the skillet and stir.
  4. Continue to stir and cook over medium heat until desired consistency is reached (3-7 minutes)
  5. Taste, then season with salt and pepper as necessary. You may not need to!
  6. Serve warm on whole wheat buns.
