Chef Dallas Pursley from Balance Restaurant shares his recipe for Savory Grains & Greens.

 

Savory Grains & Greens

Yields 4 servings

1 tbsp olive oil

¼ cup small diced onion

1 lb of assorted grains

1 qt of water

1 tbsp kosher salt

2 cups Garbanzo Beans

2 tbsp chopped parsley

1 tbsp lemon juice

1 tbsp olive oil

1 tbsp minced onion

2 bunches of Kale, de-stemmed and rough chopped

1 clove of garlic

1 tsp kosher salt

juice of 1 lemon

1 cup heirloom tomato wedges

Black pepper – 5-6 cranks from peppermill

Instructions For Grains

1.         In a medium-size pot, sauté yellow onion in olive oil on medium heat, then add water to the pot and bring to a boil

2.         Add your assorted grains and salt, reduce heat and simmer for approximately 15-20 minutes until all moisture is absorbed

3.         Then add garbanzo beans, chopped parsley and lemon juice

4.         Serve with side of greens

Instructions For Greens

1.         Heat oil in large sauté pan, add onion and sauté until translucent. 

2.         Add kale, add half of the salt, stir frequently to allow greens to wilt.  Reduce heat to a medium flame.

3.         Once wilted, add lemon juice and tomatoes, stir until tomatoes are heated fully and still intact.  Add remainder of the salt and pepper.

4.         Serve as the side for the grains
