You can catch Mike Passaniti at the upcoming March of Dimes Signature Chefs Auction on Monday, November 19 at 6:00 pm at the Blair County Convention Center. Today, he’s sharing his recipe for Shrimp and Pipette Pasta.
Shrimp and Pipette Pasta
12oz Pipette Pasta
2 table spoons melted butter
2 cloves minced garlic
1/2 diced onion
1- 15oz can artichoke hearts
6 oz sundried tomatoes
20- 16 to 20 count shrimp- peeled deveined
1/2 cup heavy cream
salt and pepper to taste
1 table spoon chopped parsley
Cook pasta and chill, coat with oil so it does not stick together
Melt the butter in a saute pan, place garlic and onion and cook until translucent
add shrimp and cook about half way, add artichokes, sundried tomatoes, add cooked pasta, add cream, add parmesan cheese, salt and pepper, and parsley.
reduce until creamy consistency and shrimp are cooked through and serve
