Linguine with Cantaloupe Sauce

Stefano Ferrari, co-owner of LIFeSTYLE in Bedford, shares his recipe for Linguine with Cantaloupe Sauce.


* 4 Tablespoons butter

* 1 Tablespoon EVOO

* 3 cups cantaloupe diced into ¼ inch cubes

* 1 cup heavy cream

* 1 tablespoon fresh lemon juice

* ½ tablespoon tomato paste

* Salt and pepper to taste

* 500 gr Linguine or Spaghetti pasta

Put the butter and the oil in a sauté pan and turn on the heat to medium high. When the butter is melted add the cantaloupe. Cook the cantaloupe for about 3-4 minutes, stirring frequently.

Add the cream, lemon juice and tomato paste. Stir and cook at medium heat until the cream is reduced to half from its original volume. Add salt and pepper, stir a couple of times and remove from the heat.

In a meantime cook the pasta in abundant salted water following the cooking directions. The moment the pasta is ready, drain it and tossed immediately with the sauce in a warm serving bowl and serve
