HONEY BAKED HAM AND ZUCCHINI FRITTERS
1 cup HoneyBaked ham, small dice
1 cup zucchini, grated
½ cup gruyere, grated
1 tsp. Dijon mustard
¾ cup all-purpose flour
1 TBSP fresh parsley, chopped
1 TBSP fresh dill, chopped
Salt and pepper, to taste
3 TBSP vegetable oil
Combine all the above ingredients except the oil in a mixing bowl.
Heat a stainless steel fry pan, add oil.
Carefully place small scoops of batter into the hot oil making little patties, do not overcrowd.
Do two batches. Let brown, then turn over and brown on the other side.
Remove from pan and place on a paper towel to remove any excess oil.
Makes 6-8 fritters
