Chef Terry Wallace from U.S. Hotel Tavern shares a recipe for Herb Roasted Salmon.

Herb Roasted Salmon

1 Salmon Fillet

1 Bunch Curly Leaf Parsley Chopped

1 Bunch Scallions Sliced Thin

2 Tablespoons Fennel Seed Toasted and ground in space grinder 

Extra Virgin Olive Oil X 1 1/2 Cups

Pepper X 1 Teaspoons

Procedure Mix Oil, Fennel, Parsley, Pepper, Scallions. Dredge Salmon in Oil Mixture. Put in sprayed dish or pan, roast until 145 degrees.

Orange Zested Cream Sauce

2 Cups Orange Juice

1/2 Cup Sugar (TT)

Zest of 2 Oranges 

Cream Soup Base or can use cream x2 cups

If using cream, thicken with slurry.

Pour over fillet allowing the middle section exposed for appearance.
