Garlic Chicken Thigh Tacos

Sweet Corn Slaw

½ head green cabbage-quartered, cored & thinly shaved

4 ears fresh sweet corn-grilled in husk, then kernels removed

2 cloves of garlic minced

2tbsp cilantro freshly chopped

1 lime juiced

1tbsp thai chili garlic paste

2tsp kosher salt

Mix all ingredients thoroughly.

Garlic Confit Chicken Thigh

2lb pork lard

2lb chicken thigh

1 bulb of garlic crushed

3 sprigs of rosemary

1tbsp kosher salt

2tsp fresh cracked pepper

4 bay leaves

2tsp paprika

2tsp chili powder

½ tsp cayenne pepper

Place all ingredients into pot & on medium-low heat cook until chicken is able to be pulled apart.  Approximately 1 hour.

Garlic Lime Yogurt

1cup Plain Greek nonfat yogurt

2 cloves garlic minced

1 lime juiced

1tbsp siracha

Place all ingredients into drink blender and blend smoothly.

Utilizing 6 inch corn tortilla shells, build your taco with quantities that you desire of the three elements

Yields 12 Tacos
