Chef Dallas: Pan Seared Fish

Chef Dallas from the Balance Restaurant stopped by to show us how to pan sear fish. 

Tools & Ingredients Needed:

Skillet – Cast Iron if possible

Straight Edge Spatula – Fish Spatula if possible

Paper Towels

Oil – Vegetable or Olive

Kosher Salt or Sea Salt

Peppercorns & Peppermill

Lemon

Fresh Fish Filet, 1 inch thick w/ firm muscular structure is best….examples…salmon, halibut, swordfish, etc.

Instructions:

Dry fish w/ paper towels

Preheat pan w/ oil

Season fish and place into hot skillet, *show side first, cook 3-4 minutes

Flip fish delicately w/ spatula & cook for another 3-4 minutes

Remove from heat & let rest on plate & finish w/ lemon juice

*show side – the prettiest side of the fish and what will be present facing up to your guests
