Caramelized Onion Dip & Homemade Crackers
1 large onion (or 2 for extra onion flavor)
1 roasted garlic clove (optional)
1/4 tea celery powder
2 Tbs butter
1/4 cup cream cheese
1/4 cup Greek style yogurt
1/4 cup mayo
Salt and pepper to taste
Pinch of cayenne
Slice onions thin. Heat butter in sauté pan over medium heat and add onions, salt, pepper, cayenne and celery powder and sauté for 10 minutes the reduce heat and cook for 20 minutes stirring occasionally until onions are browned and Caramelized. Take off heat and allow to cool.
Place cream cheese, yogurt, and mayo in bowl and mix well with a paddle attachment and beat until smooth. Add onions and mix well. Taste and adjust seasonings accordingly. Serve at room temperature.
3 Tbs butter
1 3/4 cup flour
1 tea salt
(Any herb or seasoning you want to add)
1/4 cup seeds of your choice
1 Tbs finishing salt (for on top)
In a bowl, mix the butter, salt, herbs and flour with your fingers until the mixture resembles crumbly sand. Add just enough water to the mix to form a dough. Wrap and let it rest in refrigerator for at least 15 minutes or up to 4 days.
Preheat oven to 350. Roll out dough on floured surface to a 1/4”. Sprinkle seeds and roll out one more time to secure seeds and to stretch a little thinner. Transfer rolled out dough to parchment lined sheet pan and cut with a pizza cutter to the sized you want your crackers. Bake about 10-15 minutes or until golden brown. Allow to cool.
