Our local Taste of Home Field Editor, Teena Petrus, was back in the Central Pa Live kitchen to teach us how to make some delicious treats that everyone will be sure to love at your summer picnics this year. Soup isn't something that would immediately come to mind when you are thinking of summer time snacks but wait until you try these delicious chilled soups. Just follow these recipes and you will be enjoying in no time at all.
Summer Strawberry Soup Recipe
2 cups Vanilla Yogurt
1/2 cup Orange Juice
2 pounds fresh strawberries (halved)
1/2 cup sugar (adjust for personal taste)
Mint leaves for garnish
In a blender, combine the yogurt, orange juice, strawberries and sugar. Cover and process until blended. Refrigerate for at least 2 hours. Garnish.
Makes about 6 servings.
2 1/2 cups tomato juice
3 tbsp red wine vinegar
1/2 tsp Worcestershire sauce
2 tbsp olive oil
1 tsp minced garlic
2 tsp minced fresh parsley
Hot pepper sauce to taste
1/2 tsp salt
1/8 tsp pepper
1 Tbsp lemon juice
1 cup finely chopped and seeded fresh tomato
1/2 cup finely chopped celery
1/2 cup finely chopped green pepper
1/2 cup finely chopped onion
1 small cucumber, peeled, seeded and finely chopped
In a small bowl, combine the soup base ingredients. Stir in the vegetables. Cover and refrigerate for at least 4 hours or overnight. Garnish and serve cold.
Yield: 5 cups
