Spinach Strawberry Salad with Fresh Strawberry Vinaigrette

Learn how to make a fresh strawberry vinegrette dressing for your salad!

May 20th is National Pick Strawberries Day. To celebrate, Pat Frazier from Lock Mountain Strawberries  and Cathie Dibert from Green-er Acres Farms shop by the Altoona Central PA Live kitchen to talk about strawberries and share a recipe for spinich strawberry salad with strawberry vinaigrette dressing.

Pat said that normally they shoot for the first picking around the 1st of June, but this year they are running around 14-17 days late.

Spinach Strawberry Salad with Strawberry Vinaigrette

Prep Time: 10 minutes
Cook Time: 5 minutes
Total Time: 15 minutes
Yield: 6 servings

Ingredients

cup pecan halves
3 tablespoons strawberry vinegar
teaspoon salt
1/8 teaspoon freshly ground black pepper
3 tablespoons olive oil
5 ounces fresh baby spinach (about 8 cups)
pound strawberries (about 1 cups), cut lengthwise into thick slices

Instructions

1. In a small dry frying pan, over medium heat, lightly toast the pecan halves until just golden brown. Remove from the heat and let cool.

2. In a small bowl, whisk together the strawberry vinegar, salt and pepper. Add the olive oil and whisk well until fully combined.

3. In a large bowl, place spinach, strawberries and pecans. Pour vinaigrette in as well and toss to coat.

4. Serve immediately.

Note: Prep time above does not include the time to prepare the homemade strawberry vinegar.

Strawberry Vinaigrette

Prep Time: 1 hour, 10 minutes
Total Time: 1 hour, 10 minutes
Yield: Approximately 1 1/2 cups

Ingredients

pound fresh strawberries (about 1 cups), trimmed and cut into inch pieces
1 tablespoon sugar
1 cup white balsamic vinegar

Instructions

1. Place strawberries and sugar into a blender or small food processor. Pulse on high until strawberries and sugar are pulverized (add a bit of the vinegar if necessary). Add the vinegar and blend until completely mixed.

2. Allow the strawberry-vinegar mixture to sit in the blender for one hour (this will allow the strawberry flavor to infuse the vinegar).

3. After the hour is up, pour the mixture through a fine sieve lined
