Noodle less Vegetable Lasagna
This Lasagna uses thin slices of zucchini instead of pasta noodles for a healthy garden variety lasagna.
1 pound ground beef or sausage browned and drained
24 ounces tomato sauce
6 oz can of tomato paste
2 cloves of garlic
1 t lemon juice
1 t salt
1/2 t black pepper
15 oz ricotta cheese
1/4 c basil
1 c fresh spinach chopped
1 carrot grated
1/2 c mushrooms finely chopped
2 medium- large zucchini sliced 1/8" thick, lengthwise
8 oz mozzarella cheese
Prepare meat sauce by browning 1 pound of ground beef or sausage. Drain grease and add tomato sauce, tomato paste, garlic, lemon juice, salt and pepper. Simmer for about 20 minutes.
While sauce is simmering, combine ingredients for cheese filling in a separate mixing bowl.
In a 9 x 13 baking dish spoon 1/2 of the sauce on the bottom of the dish. Arrange slices of zucchini in a single layer over the meat sauce. Spread all of the cheese filling over the zucchini followed by the remaining meat sauce and layer the remaining zucchini slices over the meat sauce. Sprinkle shredded mozzarella cheese over the zucchini.
Bake in a preheated oven at 350 degrees for 45 minutes. After baking, let lasagna rest for 10 minutes before cutting.
