PA Adventure RV Expo: Camping Themed Menu

The PA Adventure RV Expo Canteen will feature a camping themed menu created by Chef Tom Schilling. Chef Tom shares his recipe for one of the featured dishes “Uncle Joe’s Cowboy Stew with Spicy Ketchup.”
The PA Adventure RV Expo Canteen will feature a camping themed menu created by Blair County Convention Center's Executive Chef Tom Schilling. Chef Tom shares his recipe for one of the featured dishes “Uncle Joe’s Cowboy Stew with Spicy Ketchup.”  
 
Uncle Joe's Cowboy Stew with Spicy Ketchup
 
1 tbsp Olive Oil
1# Ground Chuck
1½ tbsp chopped garlic
Salt & pepper to taste
1 medium sized onion, diced
1 can whole kernel corn (drained)
1 medium Russet potato (diced large)
8 oz cheddar cheese
 
Preparation
Brown ground beef in a preheated skillet with olive oil. Add diced onions, garlic, and salt & pepper to taste. Drain off excess fat. Then add diced potatoes and cook for a few minutes while stirring. After that, add the corn. Top with cheese and cover with lid until cheese is melted. Serve with spicy ketchup.
 
Spicy Ketchup
1½ cups ketchup
1½ tsp horseradish
¼ tsp onion powder
1 tsp Dijon mustard
1½ tsp Sirachi (cayenne pepper sauce)
 
Preparation
Add all ingredients in a medium sized bowl and stir until blended.
 
You can sample the entire camping themed menu during the PA Adventure RV Expo happening at the Blair County Convention Center, Thursday, February 27 through Sunday, March 2. The expo will be open Thursday through Saturday from 10:00 am to 9:00 pm and Sunday from 11:00 am to 5:00 pm. Admission is $6 for adults. Children under 12 get in free!
