Vanilla Coconut Cream Cake
 
I love make-ahead easy desserts and this is surely one of them! You can actually use whatever type of cake mix, soda and pudding mix you prefer. See my Fun Twists below the recipe for some different flavor ideas!
 
Prep Time: 15 minutes 
Bake Time: 18-20 minutes  
Cool Time: 30 minutes
 
Total Cost: $6.64 
 
Servings: 15 pieces of cake
 
Ingredients
  - One 15.25 oz yellow cake mix
  - One 12 oz can cream soda or Coke
  - One 3.4 oz package instant vanilla pudding mix 
  - One 1 oz package fat free instant vanilla pudding mix
  - 3 cups cold low fat milk
  - One 8 ounce tub of light whipped topping
  - ½ cup shredded sweetened flaked coconut
  - 1 teaspoon coconut extract
 
Directions
Preheat your oven to 350 degrees. Grease a 13x9 cake pan with cooking spray on the bottom and sides. In a large bowl, whisk together the cake mix and cream soda until all of the visible cake mix is mixed in. You will still see some small lumps in the batter. Pour into the prepared pan and spread evenly. Bake for 18-20 minutes or until a toothpick comes out clean. Let the cake cool completely.
 
In a medium bowl, whisk together the pudding mixes and milk for about 2 minutes. Let the pudding set for about 5 minutes. Empty the whipped topping into another medium bowl and fold in the coconut extract and shredded coconut. Set aside.
 
Once the cake has fully cooled, poke holes with a butter knife throughout the cake. Spread on the pudding and gently push some of the pudding into the holes with your spatula. Top the cake with the coconut whipped cream. Refrigerate until ready to serve!
