Flag Day Parfait
For breakfast, lunch or dessert, I love to layer summer berries with yogurt and homemade granola. It's a great way to get THREE food groups into one cup. I enjoy making my own granola, as store bought can be jam packed with sugar, fat and preservatives. However, if you have prepared granola on hand, that works perfectly in these layered beauties as well. These patriotic cups are dedicated to Izeke Pinkas, MA2 in the U.S. Navy and his new wife (and my best friend) Erin. These two people love America as much as I love food. Cheers to the newlyweds, the USA and these Flag Day Parfaits!
 
Prep Time: 15 minutes         Bake Time: 20 minutes
Servings: 8 parfaits             Total Cost: $10.57
 
Ingredients
2 cups rolled oats
1/4 cup orange or apple juice
¼ cup pure maple syrup
1 tablespoon vegetable or canola oil
1 teaspoon cinnamon
4 cups low fat vanilla Greek yogurt  (or a yogurt of your choosing)
2 cups blueberries
2 cups strawberries or raspberries
 
Directions
For the granola: preheat oven to 375 and coat a large rimmed baking sheet with cooking spray. Put oats in a large mixing bowl and set aside. In a small microwave safe bowl, combine the orange or apple juice, maple syrup, vegetable oil and cinnamon. Stir to combine and microwave for 1 minute to dissolve the maple syrup. Pour mixture over the oats and toss well to coat the oats completely. Spread the oat mixture out on the baking sheet in an even later. Bake for 10 minutes. Remove from the oven and toss the granola and bake another 10 minutes. Remove from to cool completely. 
 
To build the parfaits, layer the blueberries, yogurt, raspberries or strawberries and granola into clear serving cups. Repeat the process until your parfait cups are full.  Each parfait should have about ½ cup yogurt, ½ berries and ¼ cup granola total. Enjoy or keep refrigerated until serving. *Don't make these ahead of time, the granola can get soggy.*
