Chef Mario's Makes Irish Soda Bread for St. Patty's Day

Irish Soda Bread

Yield: 8 servings
3 ½ cups cake flour + more for coating baking sheet
1 teaspoon baking soda
¾ teaspoon salt
About 1 ½ cups buttermilk
1 orange, zest only
¾ cup dried currants

1). Preheat oven to 425 degrees and lightly flour a baking sheet.
2). In a large mixing bowl, combine the cake flour, baking soda, and salt and stir to combine.
3). Add about ½ cup of the buttermilk to the dry ingredients and mix to form moist clumps.
4). Add the orange zest to the dough and then lightly flour the dried currants in a small mixing bowl and add them to the dough as well.
5). Slowly add the remaining buttermilk until the dough gathers into a ball. Turn the dough out onto a lightly floured surface and knead just until the dough holds together, about 1 minute.
6). Place the dough on the floured baking sheet and cut a 1-inch-deep X across the top of the loaf, extending almost to the edges.
7). Bake the bread for about 40 minutes or until it is golden brown and sounds hollow when tapped on the bottom. Transfer bread to a rack to cool completely before cutting and serving.
