Chef Showcase: Stuffed Meatloaf

Chef Joby is back with a new dish.

Stuffed Meatloaf with Broccoli and Cheese
2 lbs ground meat (Beef, chicken, or turkey)
1 C ketchup
1 C Finely Chopped Onion
C Bread or Cracker Crumbs
1 Egg, Beaten
1 t dry Italian seasoning
Salt and pepper to taste
1 c frozen broccoli - thawed, drained, chopped
1 c shredded cheese

Combine all meatloaf ingredients in a bowl and mix well to blend. Turn out onto a sheet of plastic wrap and shape into a rectangle 8 in wide and 12 -14 in long. Scatter the broccoli evenly across the rectangle and then sprinkle the cheese. Beginning with the short end, roll the rectangle into a log, being sure to keep it tight and pinch the ends to seal. Place seam side down in an 8 X4 bread or loaf pan. Bake 350 40 -45 min. rest 15 min before slicing.
