Chef Joby from the Bistro Returns with Turkey Mignon

It's turkey time with Chef Joby.

Turkey Mignon
For each serving you will need:
One 5-6 oz turkey breast medallion (1 - 1 inches thick and 3 in around)
1 slice slab bacon
Salt and pepper to taste
oz bleu cheese crumbles
2 T bleu cheese dressing
Wrap each medallion with the bacon, secure with a tooth pick, and season with the salt and pepper. In a hot saut pan, sear each medallion 2 - 3 min on each side. Place pan in a preheated 400* oven and finish, about 15 - 20 min.  Drizzle with the dressing and top with the crumbles
