Chef Jesse's North Carolina Inspired BBQ Sauce

Chef Jesse Jones is back in the Central PA Live kitchen for a return appearance to share another one of his famous recipes. He was first on our show back on February 7, 2012 to celebrate Black History Month and Mardi Gras. He made "Dirty Shrimp and Spicy Aged Cheddar Cheese Cornbread with Micro Greens". This time he shares his recipe for homemade North Carolina inspired BBQ Sauce!

Chef Jesse has ties to Central PA. His friend Chef Melanie Preschutti of State College has made several appearances to cook in the Central PA Live kitchen!

Chef Jesse's Recipe:

Chef Jesse's North Carolina inspired BBQ Sauce

Makes 1 1/2 Quarts

1 Tablespoon Canola oil
1 Red onion, Minced
1 Medium garlic clove, Minced
1 Cup Ketchup
1 Cup chili sauce
1/2 Cup Apple Juice
1/2 cup Cider Vinegar
1/3 cup Hot sauce ( frank's)
1/2 cup Applejack Brandy
1 Cup Honey
1 Cup water
1/4 Cup Creole Mustard
1 Tablespoon Worcestershire sauce
1/3 Teaspoon fresh Thyme
Salt and pepper to taste

In a heavy saucepan, add oil over medium heat, cook onion and garlic, until softened, about 3 to 5 minutes. Stir ketchup, chili sauce, apple juice, cider vinegar, hot sauce, applejack brandy, honey, water, Creole Mustard, Worcestershire, thyme, salt and pepper. Bring to a boil, reduce heat, simmer for 20 minutes, adjust the taste, use on all your favorites meats.
