1 pound ground turkey (or beef)
- Found at local stores $3/lb or near $4 for fresh.
2 boxes Rice-a-Roni (your choice, I recommend Long Grain & Wild Rice)
- Price usually $1 to $1.50 per box
3-4 Bell Peppers (your choice of color)
- Prices vary depending on season; bell peppers are currently out of season. I've seen green bell peppers in season as cheap as 3/$1.
Brown ground turkey in large skillet and drain. Follow directions to prepare Rice-a-Roni in same skillet as turkey.
Remove top from peppers and remove seeds. Fill pepper with turkey/rice mixture until mix is just above the pepper's top.
Bake in greased deeper baking or casserole dish at 350 for 20 minutes or until pepper tops begin curling inward. Turkey/rice mixture will be golden brown.
Can be topped with ketchup, shredded cheese, salsa, or eaten as is.
This recipe has many variations with the type of pepper, meat, or rice flavor you use. If you are feeding more people, this recipe can easily be doubled.
