Mini Breakfast Pizzas with Ham and Cheese


24 potato rounds thawed (flat tater tots)

1/2 cup shredded cheddar cheese

6 beaten eggs

1 cup diced ham

Salt and pepper (to taste)


Preheat the oven to 350.

Lightly grease a mini muffin pan.

Next put a thawed potato round in the bottom of each spot in the mini muffin tin

Evenly distribute the diced ham.

Layer on the cheese and then pour the eggs on top, fill to just under the top

Lightly sprinkle your salt and pepper up top

Cook for 10-12 minutes until you have a a nice "puffed" Mini Breakfast pizza.
