Roasted Salmon w Cranberry Mustard Sauce
Don’t sugarcoat it: When diabetes strikes, it doesn’t just mean monitoring blood sugar a few times a day. It means making lifestyle changes and being vigilant about the many complications the disease brings, such as vision problems, wounds that are slow to heal and neuropathy, a type of nerve damage. During National Diabetes Month in November, Gregory Andrews from Geisinger will show us how you can prevent diabetes by making healthy diet changes.
Fish Salmon - 4
Oil Pomace Olive - 3 tbsp.
Classic Dijon Mustard - 2 tbsp.
Sweetened Dried Cranberry - 2 tbsp.
Jellied Cranberry Sauce - 1/3 cup
Delicious Golden Apples - 1
Granulated Sugar - 1/4 cup
Fresh Yellow Onion Diced - 2tbsp
Granulated Garlic - 1/4 tsp
Vinegar and Red Wine - 2tbsp
1. Preheat oven to 450degrees and spray baking sheet with nonstick spray. Place salmon on baking sheet skin side down.
2. Wisk mustard and oil together and brush on top of salmon. Bake for about 13 minutes.
3. Wisk together ingredients in step 3 with remaining mustard/oil mixture. Turn on broiler and broil salmon until top is browning in spots (30sec-1min). Serve and top with 2 tbsp. prepared relish
