Southwestern Tilapia with Mango Peach Salsa
Tilapia is one of my favorite types of fish because it takes on whatever flavors you add to it. Spices such as chili powder, paprika, dried parsley and garlic powder are typical pantry ingredients that come together to flavor your fish without adding a fatty sauce. Top this delicious fish with a fresh homemade mango peach salsa when peaches are fresh in the summer time.  The Serrano peppers, which are a mini version of a jalapeno, give it a perfect kick of heat.
Prep Time: 20 minutes 
Servings: 4, one 4oz tilapia filet and ¾ cup salsa
Bake Time: 18 minutes

Southwestern Tilapia
½ teaspoon chili powder
½ teaspoon paprika
¼ teaspoon garlic powder
¼ teaspoon dried parsley
1/8 teaspoon salt
1/8 teaspoon pepper
1 pound fresh or frozen tilapia filets, thawed if using frozen
Mango Peach Salsa
1 ripe mango, peeled and diced
2 medium peaches, diced
2 scallions, finely chopped
2 Serrano peppers, seeds, stem and ribbing removed and finely minced
½ teaspoon chili powder
2 teaspoons honey
1 teaspoon olive oil
Juice of 1 lime
1/8 teaspoon salt
Preheat oven to 375 and line a small rimmed baking sheet with foil. Spray with cooking spray to prevent sticking. Lay out tilapia filets on the foil. In a small bowl, mix together chili powder, paprika, garlic powder, dried parsley, salt and pepper. Season both sides of the tilapia filets with the spice mix. Bake for 16-18 minutes or until the fish is opaque in color and flakes away easily with a fork.
In a medium mixing bowl, combine the mango, peaches, scallions, minced Serrano pepper, chili powder, honey, olive oil, lime juice and salt. Gently fold all of the ingredients to combine. Serve on top of the tilapia filets!
