Grilled Hawaiian Chicken Kabobs
When my husband and I vacationed with his family in Hawaii, we tasted the most delicious pineapples on earth. This dish, with my homemade Sweet Garlic BBQ Sauce, really takes me back to the beaches of Maui. Add other vegetables to the skewer if you desire or try thawed shrimp instead!

Servings: 4, about 2 kabobs per serving

¾ cup Sweet Garlic BBQ Sauce (recipe below) or your favorite BBQ Sauce
1 large pineapple, cut into large cubes, about 1x1 inch
1 ½ pounds of boneless skinless chicken breast, cut into 1 inch cubes
8-10 wooden or metal kabob skewers
Heat your grill to medium heat. Next, prepare your Sweet Garlic BBQ Sauce. You will need about ¾ cup for this recipe. Season your chicken cubes with salt and pepper and toss with ¼ cup of the BBQ sauce to marinade while you cut up your pineapple. Place your pineapple in a separate bowl for easy skewering. Skewer on the marinated chicken cubes with the pineapple alternately. Leave some room between each item you put on the skewer to allow for even cooking. Once you have all of your kabobs ready, place them on the grill. Grill about 5-6 minutes on each side, basting with the remaining ½ cup sauce as they cook. Remove kabobs to a clean platter and serve!

Sweet Garlic BBQ Sauce
Sometimes I like a salty tangy BBQ and other times I enjoy a sweeter sauce! This sauce airs on the honey-BBQ side, but has many layers of fresh flavor! It works great as a marinade or as a basting sauce. Put a dollop on your favorite sandwich or use as a dipping sauce for sweet potato or butternut squash fries!
Total Time 5 minutes Servings: 1 ¾ cups, 2 tablespoons per serving Total Cost: $2.19
1 cup natural ketchup, such as Heinz Simply Ketchup
1/3 cup honey
2 teaspoons paprika
¼ cup apple cider vinegar
3 cloves of garlic, minced
Two dashes of garlic powder
Salt and pepper to season
Combine all ingredients in a small bowl. Whisk all ingredients together vigorously. Store your sauce in an airtight sealed jar in the refrigerator for up to two weeks.
