Savory Veggie Pancakes with Scallion Herb Cream

Looking for a savory-style pancake to serve at breakfast, lunch or dinner? This recipe is a perfect, vegetarian, money-saving healthy meal that will be on your dinner table in 20 minutes! The scallion-herb cream and Sriracha sauce adds a nice finish to this meal.

 

Total Time: 20 minutes (12 prep, 8 cook)

 

Serves: 14 Pancakes

 

Ingredients

10 eggs beaten

1/3 cup low fat milk

1/3 cup flour

½ tsp. baking powder

¼ tsp. black pepper

1 cup bell peppers very thinly sliced an cut into 1 inch pieces, preferably red, orange or yellow

¼ cup parsley, chopped

½ cup scallions, chopped

2 cloves garlic, chopped

1 cup gouda cheese, grated

Cooking spray to prevent sticking

Sriracha Sauce optional

 

Pancake Directions
In a large mixing bowl, beat the eggs, milk, flour, baking powder, salt and pepper vigorously for 2 minutes, or until the mixture is completely combined. Add in the broccoli slaw, peppers, parsley, green onions, garlic and Gouda. Beat again until the mixture is well combine.

Heat a large skillet over medium-low heat and coat with cooking spray. Ladle the batter onto the outside edges of the pan into circles, smoothing out the veggies so they cook evenly on the pan. Use a spatula to pull in the moving egg batter back into each pancake, as the batter will be slightly runny. Cook about 2-3 minutes per side or until set. Flip and cook an additional 2 minutes. Both sides should be golden brown. Serve with the Scallion Herb Cream.

Scallion Herb Cream Ingredients
½ cup plain non-fat Greek yogurt
½ cup light sour cream
¼ cup parsley, finely chopped
2 green onions, finely chopped
Salt and pepper to season
2 dashes of garlic powder
Scallion Herb Cream Directions
Combine all of the ingredients in small serving bowl with a whisk or spoon. Serve with pancakes
