Broccoli and Feta Crust-less QuicheI love to make omelets, but usually don't have time to make a full breakfast before work. This dish is great for making the night before and baking in the morning as you get ready for your day. Feel free to mix and match your own veggies and cheeses to your liking!

2 cups steamed broccoli florets or a 16 oz bag of frozen
broccoli florets, completely thawed.
3 scallions, roughly chopped (about ¼ cup)
1 cup low fat milk
Salt and pepper to season
½ cup feta cheese
Preheat your oven to 375 degrees and coat a large 10 inch pie plate with olive oil spray. Spread broccoli florets evenly around the bottom of the pie plate. In a medium bowl, beat eggs, milk and scallions with a fork until well combined. Season with salt and pepper, add feta cheese and whisk with the fork again. Gently pour the egg mixture over the broccoli and bake for 30-35 minutes or until the quiche is fully set and a knife inserted comes out clean. Serve with your favorite breakfast bread and fresh fruit for a complete breakfast!
