Chef Mario Makes Margaritas and Guacamole

Chef Mario Porreca stops by to share two recipes with Mexican flair: Guacamole and Chipoltle/Sage Margaritas!

Yield: about 6 servings

2 avocados, pits removed and peeled
2 tablespoons mayonnaise
½ lime, juice only
1 tablespoon fresh cilantro, chopped
5 tablespoons salsa, drained
Celery salt to taste
Cayenne pepper to taste

1). In a food processor, combine the avocado, mayonnaise, and lime juice and pulse until roughly pureed (lumps in the mixture is fine).
2). Transfer the avocado mixture to a medium sized mixing bowl and use a rubber spatula to fold the chopped cilantro and drained salsa into the avocado mixture.
3). Season to taste with celery salt and cayenne pepper and serve with corn chips.

Chipotle and Sage Margarita
Yield: 1 cocktail

For the Chipotle and Sage Simple Syrup:
2 cups water
1 heaping teaspoon chipotle powder
2 sprigs fresh sage
¾ cup sugar

1). In a small saucepot bring the water to a boil.
2). Add the chipotle powder and sage to the water and reduce the heat to a light simmer.  Cover and let the liquid gently simmer for 10 minutes.
3). Remove the liquid from the heat and strain it through a coffee filter.
4). Return the liquid to a clean small saucepot, add the sugar, and return it to a boil.
5). Transfer the simple syrup to a bowl and refrigerate until completely chilled for further use.

For the Chipotle and Sage Margarita:
1 tablespoon sea salt
1 tablespoon sugar
1 teaspoon rubbed sage (dried)
1 lime, zest only
14 ice cubes
3 ounces tequila
2 ounces fresh squeezed lime juice
1 ounce chipotle and sage simple syrup (see earlier recipe)
1 teaspoon Cointreau or any orange flavored liqueur
1 slice of fresh lime (for garnish)
1 sprig of fresh sage (for garnish)

1). In a small food processor or blender combine the sea salt, sugar, rubbed sage, and lime zest and pulse lightly to thoroughly combine.
2). Pour the salt mixture onto a small plate.  Lightly rub the lip of your glass with lime juice and then in the salt mixture to coat the rim.
3). Place 6 ice cubes into the glass for serving the cocktail on the rocks.
4). In a shaker combine the remaining 8 ice cubes, tequila, lime juice, chipotle and sage simple syrup, and orang liqueur.  Place the lid onto the shaker and shake vigorously to thoroughly combine and chill the cocktail.
5). Remove the top lid of the shaker and pour the cocktail over the ice in the salt-rimmed glass.
6). Garnish the margarita with a slice of fresh lime and a sprig of fresh sage and serve immediately.
